Hypothetically speaking, when would one remove the winter protection from a banana in this area - middle of New York. We don't usually plant anything until Memorial Day. We are zone 5. Warm (65 degree days and 30ish nights) in May. Do I take main protection off, say in April, then use some kind of "overnight protection" until what 45, 55 nights?????

Sounds like a good plan to me. What type do you have outside?
We just moved all but the last few plants out other day, just potted with wind having was afraid to move outside.

Look at accuweather.com and see the weather forcast for your area for the next 2 weeks. If the low temp is above 40 you should be in good shape except for the most sensitive tropical plants

I live in Upstate New York. However I live near buffalo thus near the lake. That bumps me up to a zone 6 :). So we're getting 50s nights and stuff. I have already planted out. I know that Musa Basjoo can tolerate light frosts if that's what you have growing but i'd still cover it.

I take the winter covering off in mid april usually, when ever the daffodils start/finish blooming. I feel that the mulch on later than that helps keep the ground cold and doesn't let it warm up, because when you take it off, it feels cold under there.
