I was chatting earlier with my friend Bryan of Montoso Gardens (http://www.montosogardens.com/) in Puerto Rico and he shared with me some recipes. The first one is a recipe his wife is making tonight:

Pastelon by Yarisa (like a lasagna but with ripe plantains instead of noodles)
fry plantain strips in olive oil
put them in a baking dish like you would lasagna noodles
prepare ground meat (or soy substitute) with garlic, cilantro, peppers, spices, onions, tomato sauce
make layers
cover with tomato sauce and grated mozarella
bake for 30 minutes at 350 F

Here is a variation online: http://www.elcolmadito.com/USRecetasDetail.asp?Numero=52

They only downside to all of these is that Bryan says he likes so many of these cooked banana recipes that he doesn't really enjoy FRESH bananas!!!

MERRY CHRISTMAS!!!
