Ok, so - A bunch of bananas is cut from the stalk. I am curious at what point the nutrition is at it's peak. When green are the nutrient levels the same as when it is at the peak ripeness and also when about rotted out? Or, is there some kind of a curve to the nutrient levels within the fruit even once harvested?
I'm hoping some of you here have some input on this or have pondered it before.
