Wow Keith! I hope the bunches are big and the fingers are many. Your pictures, like always, are incredible.

Removed the bottom 4 hands yesterday, about 50 fingers.
Left the top 4 hands, probably a little under 60 fingers.
Also pruned a FHIA-21 to 1 hand. Jan 27, 2016

Keith, I have heard of people trimming off hands to fill the remaining hands quicker when winter was approaching. But you don't get that kind of winter. So why would you trim off hands?

When you trim the bunch you improve the calibre of the remaining fruits.
There are some grades and standards for plantains.
Calidad Longitud Dorsal Peso en gramos
Especial 31 cm. o más 368.55 o más
Primera 20 cm. a 30.99 cm 198.45 g a 368.3 g.
Segunda 15 cm. a 19.90 cm 141.75 g a 198.2 g.
Especial and Primera sell for a lot more than segunda. You never see segunda here. Most of what I see is at least 10 inches long and half a pound.

So why would you trim off hands?
It's all about uniformity, the top three hands are very similar and the forth is close enough but the fifth hand is not. The top four hands will average around 38 cm. & 450 gm. - 15" & 16 oz. We sell plantains by the bunch and if you're going to leave the trash hands on you're certainly not going to charge for it. It's a little surprising that our trash is considered first-class fruit for Nick.
Fruit in the top few hands were 15" and over 16 oz.

I'd like to get some of these less known cultivars into the bananas.org community.
If anyone is interested in growing the Maiden (French-type plantain) or doing this experiment Maiden & Dominican Red (french-types) (http://136.145.83.33:8000/jspui/bitstream/10476/787/1/Vol.%2090%20p.173-182.pdf) send me a pm and I'll respond to your message as the plants become available.

That's how they are sold at the grocery store. It might be eye opening for you to see what is sold over here as plantains.

Your description of 10" & 8 oz. is bad enough.
Maybe they would sell more if a higher quality fruit was offered.
