Lots of greens but I bought 1.64 pounds of red only! So what to do with them? Yes, I can make a knock off Sirachi (which I can buy here) or smoke them for chipoltes if nobody suggests something else. They're really ripe...ideas?

Awesome and refreshing.......keeps the mosquitos off when fishing too.

You could always do something crazy like ferment them. Something like at the following link. Fermented Hot Chili Sauce Recipe — Nourished Kitchen (http://nourishedkitchen.com/fermented-hot-chili-sauce-recipe/)

The site Wild Fermentation | Fermentation makes foods more nutritious, as well as delicious! :: Wild Fermentation (http://www.wildfermentation.com) has a forum all about fermenting if you have never done it before. It is really cool what you can do with veggies, salt water and time.
