Anyone know what might affect the quality of the core of a banana? My recent harvest of Kandrian has a bit of a tougher core. The texture is also somewhat off. My current guess is that I harvested it a bit too earlier. Rather than wait for the first finger to turn yellow, I harvested a couple of weeks after the male flower died. I've seen other members do this with different varieties of banana and thought I would try it out.

Some varieties have a "tougher" center. If it ripened and turned yellow, it might have been picked too soon. Try again in 30 days and see what you get.

I think that picking it too soon was indeed the issue. I don't think Kandrian is one of those varieties that you can pick early without to many ill effects. Similarly SH3640 is definitely not one you want to harvest early. In contrast, the Goldfinger and Namwah I grow seem to tolerate being harvested early.
