Hi all. I live norht of San Francisco Bay at about 700 ft. altitude and 30 miles from the ocean. I had a banana grove on Kauai containg more than 50 varieties, so I'm not a beginner. Our home has been in vone 9b for the last several years and I suspect global warming is go to pretty much make that permanent. So, I'm planting hardier varieties here. We'll see. There is one question I'd like answered now. I have a hardy seeded banana I purchased from Plant Delights. If, when it blooms, I cut off the male flower before pollen is released, will the female flowers still produce bananas? Don

To answer your question about the inflorescence: female flowers and subsequently fruits are produced first. When the male flowers appear, there will not be any more female flowers.
At this point many people just cut the entire inflorescence about 8"-12" below the last hand of fruits.

I recommend you try Dwarf Namwah and Dwarf Orinoco.
