TEXTURE-A bit pasty like a Williams, with a very soft, almost gooey center. Also creamy like a Dwarf Brazilian. Overall very pleasant. A couple days more ripe, the gooey center goes away, so it is less interesting, but no less pleasant.
FIRMNESS-Somewhat firm like a DB at the same stage of ripeness.
SWEETNESS-Similar to a ripe DB, not as sweet as most Cavendish.
TARTNESS-Less tangy than a DB, but still enough to make it interesting. Tanginess seems to increase upon ripening a couple days after traces of green vanish and some brown spots appear.
RIPENESS-No green at all on the peel. Separates (too) easily from the hand like a ripe Dwarf Brazilian. Still has a bit of astringency at this stage, which is gone a couple days later. Strings stick to the fruit at this stage but are easily removed.
FLAVOR-Again, similar in overall taste to a good DB. Tropical tasting. Different than DB, but every bit as good. This is one of the best I’ve had but I’m very partial to DB.
OTHER-This was grown on the Big Island by my friend on the Hamakua coast. Originally started as a TC sold by the main banana nursery in Hawaii. Seems to be the real thing.
OVERALL RATING-8.5. This is one of the top 5-10 I’ve tasted. In the same league as my favorites (Mysore, DB, Mona Lisa, Nang Phaya, and Gros Michel). I’d be happy eating this every day if this was more available. I’m planting more of them!
SUGGESTED USE-As a dessert banana, could be used for anything. Did not try as a cooking banana.
