Granny Smith, IMO. They stay firm and are tart, yet not too sour.

As I used to be a baker, I'd say Granny Smith for firm apple and cortland or lobo for the soft type.

I've been working on a Dutch apple pancake for several years now. I almost have it perfected. It'll be just like Bickford's or the Original Pancake House recipe.
