I cut down a bunch of bananas about 3 weeks ago because of the cold. They were basically fully mature in size, but were completely green. I have been hanging the bunch in my indoor laundry room the entire time. So far, they are still hard and totally green. How long should it take to begin turning yellow and softening? I wasn't sure if I should start separating the hands to help.

It might take a few weeks depending on the temperature in your laundry room, but if they start to ripen, they will most likely all start at once.
I usually cut a hand of bananas or whatever I need and put it in a brown paper grocery bag with a couple overripe apples. The apples will give up ethylene gas which speeds up the ripening process of your bananas.

6 months from flowering is the rule of thumb here.

Don't worry if it takes a long time. One year I had green bananas hanging in my garage for several months before they suddenly turned yellow. They tasted great, so just try to be patient.
