My Musa Velutina/Daisycarpa started blooming today, and I want to harvest the seeds. Are there pollinators available in the U.S, or do I need to hand pollinate them. Also, can I harvest the bunch before the bananas split, or do I need to wait for the seeds to be mature, I am afraid the birds will beat me to it.

You don't need to pollinate them, they should easily do it on their own. You can harvest the bananas before they split, but make sure you do it right before they split or as they start splitting to give the seeds time to mature.
