Ones that are are light and fluffy inside but crunchy outside? When scoping out food sources in Palm Bay a week or so ago, I purchased one at a little Rastafarian type market; it was beyond yummy! I came home and checked for recipes; the one I settled on was not it. Mine was more like a coconut biscuit. Good but not what I wanted.

DMThat's one I found; I haven't tried that one yet. The little market where I purchased this gem was Eli's West Indian Grocery, 5108 Minton Rd NW, Palm Bay, FL 32907. My late mother taught me to always purchase something when you visit a small business. Groceries didn't impress me so I took a chance on these and am so glad I did. Anyone up for asking the chef/owner for his recipe? :ha:

Will have to stop by there, I turn at that intersection every day (unfortunately in the direction away from that market).
Years ago, when there were only 1 or 2 Caribbean markets around this area, and before that intersection got so lane crazy, I used to stop at a Caribbean market at that strip plaza, wasn't called Eli's then.

Chat him up and get the recipe! Offer him bananas. Heck, sell him bananas! Even frozen and defrosted the rock is wonderful!
