View Full Version : Banana Bread with chocolate chips

Everyone loves this so I've had to make 6 the past 2 weeks.
You can modify the nuts and chocolate to taste.

1 3/4 cup all-purpose flour
1 1/2 cup sugar
1 tsp baking soda
1/2 tsp salt
MIX up in a bowl then add and mix in

1/2 cup Nestles Semi Sweet Chocolate chips
1/2 cup pecan pieces
(vary these according to taste) but this combo works great

2 eggs
1/2 cup vegetable oil
1/4 cup + 1 tbl buttermilk
1 tsp vanilla extract
MIX in another bowl

Mash 6 cavandish size or 5 orinoco size bananas with a fork in a third bowl until real mushy.

Add to wet ingredients and mix then add in dry ingredients and mix well.

I have a 1 1/2 qt Corning ware loaf pan that measures about 7 x 5 1/2 x 3 deep that is just right. Spray inside with Pam and fill to about 1/4 inch from top.

Cook at 325 for 1 hr, 20 minutes - your pan might take a different time.
It gets dark on top - not golden so don't get upset and think it's burning.

Cool on wire rack then turn over and it slides right out.

Microwaved slice with butter - YUMMMM

Anna,

I made this last batch with Orinoco's and found that particular banana needs to be pretty ripe (not black and squishy, but lots of brown and pretty soft) to get best flavor out of it.

But with chocolate chips, who cares about the banana taste???

I have one in the oven now and a few more to make with all this Raja Puri fruit. It freezes pretty good too so I'm makiing some for Christmas 'cause I don't think I will have any more fruit before then.

Hope you like it - so far everyone loves it. little butter, 15 secs in the microwave, YUMMMM

Three in the oven now. They smell great!
I'll probably dust the top of the loaves with powdered sugar when I take them out.

One I did with almonds instead of pecans because I had the almonds lying around for a while and wanted to get rid of them. I wonder how that one will turn out...

I ran out of eggs but maybe tomorrow or the next day I'll make another two loaves or so when I get more.

So how was it Jarred?

Same recipe but yours look different than mine. Mine gets real dark on top but real moist inside.

I made 4 this week. Vicki took one to work and it was devoured before noon and there were only 6 people there. Little pigs. HA
