...can you tell me your experience/if you have found them -or their fruit's core- to be "pithy" or 'corky' on more occasions that not? ...or is this an uncommon occurrence?

I read some folks postings as to this and don't know the frequency of incidence?

I am planning to get both of these varieties, but want to be prepared (to not be disappointed) if it is, indeed, common that the fruit is like this?

Lastly, does anyone known why the fruit may do this?

My Dwarf Nam Wah or false ice cream like I use to call it is my best banana. Best cold tolerance and best tasting fruit! Don't know if I answered you question or not.

Raja Puri is an excellent banana in terms of hardiness. Its leaves are tough and it can take the cold. It is also very short and compact, which is a huge plus. I have not yet tried the fruit but I am expecting at least one harvest this year.
