Can someone please tell me what is the scientific name for:
"California Gold"?
and the
"Dwarf Cavendish"?

Both of these edible banana types are cultivars -- not species; as such they cannot be grown from seed nor is there a Linnaean biological taxonomy for them. We can however talk about the genetic group they belong to; e.g., Musa AAA, Musa AAB, etc.

A Caligold (http://www.bananas.org/f15/caligold-18017.html) is a sport of an Orinoco (http://www.bananas.org/f2/orinoco-19569.html)(ABB) is all green, fruits @ roughly 6' or so. If fed right can get decent sized bunches.
Dwarf Cavendish can be found in the Wiki (http://www.bananas.org/w/index.php?title=Special:Allpages) on the toolbar.. :^)

If you're wondering how it's written in scientific papers, I think cultivars generally appear like this:
Musa 'Cultivar Name' (genetic group)
So for example,
Dwarf Cavendish would be written as Musa 'Dwarf Cavendish' (AAA)
California Gold would be written as Musa 'California Gold' (ABB)
Dwarf Brazilian would be written as Musa 'Dwarf Brazilian' (AAB)
etc
