I planted one of these trees last year and it has been fruiting like crazy. I've discovered the fruit is similar to kumquats, as the rind is good but the fruit sour.
JoeReal - Chong visited your place and said you have this fruit. What can I do with it?

There are thousands of things you can do with it. We use it regularly as condiments on many food. You can squeeze it over seafood like lobsters, shrimps, fish, scallops. You can use the juices as important part of marinade for BBQ or smoking, simply replace what ever requires lemons with the juices of this one. When you cook, you can replace whatever would require vinegar and substitue the juices for this one. these alone you can have thousands of recipes for barbecue and other food, so the thousand uses.

Cough medicine can be made from a 1/3 gin, 1/3 calamansi juice and 1/3 honey. In drinks, you can subsitute key limes with this one, after all one of the parents of Calamansi is a lime type hybridized with kumquat. You can squeeze the juices on beer or vodka and drink away. You can make wine that rivals even the grape wine if you know the process well enough, and I think Chong can tell you about the Calamondin (syn of Calamansi) wine that I made.

We seldom use the rinds of this one unlike kumquats, but the rinds and juices are good for making excellent Calamondin marmalades, and you can search the internet for recipes of Calamondin marmalades. They're all excellent.

If you are simply too lazy to find out the other recipes, simply squeeze juice from about 8 to 10 pieces of Calamondin fruits into a glass (12 oz), sweeten it to your liking (splenda, or honey, or aspartame or regular sugar), put two ice cubes and enjoy. If you are having a fever, or colds, use warm water instead and drink away. Very effective either as a cool refreshing summer drink or cold remedy.

Also, been to Riverside at least twice each year. Perhaps this summer when kids clamor for their rides in Magic Mountain or other theme parks, we stay at our friend's place in Riverside. I might drop over to your place one of these days.\\

I am probably in the minority here, but I eat them just like Kumquats. Just pull them off the tree and pop them into my mouth. I love the sour taste. Its addictive. I have 3 trees in my yard, I like them so much!

You'll get more blooms and fruits if you harvest the fruits using pruning shear or scissors. If you just pull them out, be sure to pull including the petiole, otherwise some skin will be left behind, which in turn will have fungal growth which can cause some bloom rot.

Thanks for that! I decided to try just trying one whole. I liked it!
It even went well with Chardonnay. I thought the tastes would totally clash -but they were very complimentary. At least for me. :)

I made Calamondin-Chardonnay wine, and it was a hit. I'm down to just 2 bottles and keeping it. I made about 48 bottles of Calamondin-Chardonnay wine. You would have loved it...
