I have two "ice Cream" bananas that WERE about four feet tall.
Each one is in a 1/2 barrel (55 gal) container.
I live in the Sacramento Valley, and we had a hard freeze last night, and are expected to have three more nights of sub 30'.
I watered the soil and covered with blankets.
The leaves are now straight down and brown.
These are supposed to be cold hardy, I was told.
Is the pseudostem dead?
What more could I have done?

If the pseudostem is still firm and green or yellow then it should be alive.

Exactly. It will promote rot. You just need to keep the soil slightly damp if they're not growing.

In your case I would just monitor the weather forecast and in case frost is expected ,
toss either an old quilt or some frost cloth over the plants. Important: keep them
uncovered, when no frost threatens
