Hi,

Mysore bananas are very common on Trinidad. They are not highly regarded; have no market value as whole fruit; and therefore are never stolen from fields.

Additionally, they are extremely disease resistant; tolerate or thrive under adverse conditions of soil and moisture; and the fruits are very flavourful.


I want to devise the making of a cheap medium quality wine out of them: sweet, low alcohol, shortest preparation time; and with technology appropriate to a rural third world peasant community.

My experimentation is already underway... But... Can anyone please advise?

bananas,yeast,warm water,big pot or jug 2 weeks and try to keep as clean as possible..watch out for mold..

I'm sterilising the must; using a heavy baker's yeast inoculation; and running the fermentation at ambient temperature of about 84deg F.

So, scrupulous sanitation apart how do I make sure that I don't get mould?

The idea is to produce a consistent product so that peasant home vintners can augment their meagre incomes from village sales of a value-added product derived from a locally worthless (but really well-adapted) banana - Mysore.
