I have a dozen or so bunches of fruit from my massive bananas this year. They got so large due to the very mild winter that we had last winter.

How can I get them to ripen? Frost will hit my area within the month and I would like to save at least one or two bunches. I seem to remember somewhere that you can cut the stalks and put them in a bucket of water.

I have a sun room that I can put them in, but it has rather low ceilings.

What is the best path forward to save some of this crop and get them to ripen?

I never heard of such a technique.. With your banana's all tight in a location I'd christmas light them and put a big thermo blanket over them in a frost or light freeze. The only other way is to cut off several hands and hope what's left plumps up before ill weather. I hope that helps. :^)
