I have two bunches that bloomed back in mid-April, should i cut them down till one of the fingers turn yellow or may I cut it down sooner?

Usually it's 90 to 120 days for Cavendish and Manzano . You can also wait till you see a slight color change and then cut them .

If you wait until you see a slit color change you know they have reached full size.

Do what Tony said. And look for them to have completely filled out. I wouldn't expect them to be ready yet, given your climate. They ripen much faster in the tropics, or places with tropical weather when the fruit are maturing (e.g., Florida during the summer).
