Here is my recipe for Banana Cream and Nut Cookies.

Just made another batch today. Recipe after the picture.

Randy's Secret Banana Nut Cookies Recipe


Note: To make nice and tall cookies don't over mix.

1 stick butter
1 teaspoon vanilla
4 oz of banana(About 1 banana)
1/2 cup (3.75 ounces) granulated sugar
1/4 cup (1.9 ounces) vegetable oil
1 large egg
1 large or 2 small (3.4 ounces each) packages Banana Cream instant pudding mix
1/2 teaspoon salt
1 teaspoon baking powder
9 oz or 2 cups King Arthur unbleached all-purpose flour(KA worked best)
1/2 cup chopped pecans or walnuts or both


In mixer bowl, cut cold butter into small pieces.
Add butter. Beat butter about 15 seconds or until just starting to get creamy.
Add the vanilla and banana and beat to mix again 10-15 seconds.
Add sugar slowly on slow speed then beat for about 10 seconds or until just combined.
Add the oil, egg, pudding mix, , salt, and baking powder then beat till mixed agin 10-15 seconds.
Add the flour, mixing till everything is combined.
Add nuts.
The dough will be soft but it will firm in the Fridge.
Chill while oven preheats.

I use the cookie scoop, and 1/2 sheet pans.

Bake the cookies in a preheated 350°F New oven for 18-20 minutes, until they begin to brown around the edges, and are golden brown on the bottom. Transfer them to a rack to cool completely.

Randy ---- one of the reasons I want to try this recipe out now is I still can get fresh pecans in the shell from a local farm market.

I am a pecan nut! :ha: Eat em right out of the shell - they have a perfect sweet/sour taste --- but only if they are very fresh. My wife says Eeeeuuuuuuuuwww when I offer her some.

Me too. Love pecans. I have two twelve year old pecan trees that are just getting into bearing years. Lot of pecan trees around here.

Hi Chong ---- it's been awhile since I saw a post from you. You still haven't found out the common name for the Philippine Baloy banana for me. lol:ha:
