Is there an amendment or fertilizer to feed a plant to increase the sweetness of bananas?

Yes it is, but let the nature do it self.
You can cover the bunch with blue plastic. Nylon rice sacks work well too. Remember that the plastic must have holes at the bottom for drainage of water. Covering the whole banana fruit with a big blue sack when it is about 2 months old is good for fruit. It makes the fruits get bigger and also protects from birds.

A higher brix level is important. Learn why, and how to increase it. (http://www.healthy-vegetable-gardening.com/brix-level.html)

Some say sun ripened is best??, so they wait 'till one banana on the bunch is turning yellow before cutting the bunch. I usually follow that line .Using a bunch cover helps, especially when flying foxes are a threat to a bunch that is nearly ripe- I'd be really interested to see what others say about it? Does leaving the bunch growing till one is ripe, really make a difference to the taste of the banana?
