The thing is that they need proper moist in air. Do you have it in Australia?
Bananas when the temperature is about 40C plus goes to dormancy the same if the temperature is lower than 15C.

Yes we have moist air here as well as good banana growing conditions just where I am located works out to be about zone 9.5 as we sometimes in winter get down to 0 degrees celcius about 37 degrees farenhight I think.
Also good humidity.
also I have growing well here the following
Dwarf red dacca
Dwarf cavendish
lady finger
blue java
valery
pisag celang
williams
goldfinger
ducasse
rajapuri

Sabas might be a nice banana to try out. They do really well for me and they are very frost hardy. Summers here are usually around 31C or so, last summer had about 6 days near or slightly 40C (above 100F) and my Saba did not mind it. In fact it only grows when temperatures are consistently in the 80s or warmer during the day (27C and up). Compare that to my Ensete that grows well this time of the year when temperatures are only in the low 70s (about 22C).
Sabas get very large though, might be one of the largest banana trees out there so make sure you have the space!
