Story goes like this, I recived a duck as a gift some time ago and I would like to cook something special for familly Easter lunch but ducks are not common meal here and I dont have any idea what to do with it.

This is how I make it. My wife is Danish so it brings back childhood memories for her, and it's really delicious.

If you're used to being in the kitchen, here's a quick & easy roast duck. If it's a "domesticated duck" you may want to remove some of the thicker layers of fat (wild duck has little fat).
Rub inside & out with salt & if you want, pepper.
Cut an orange, lemon & apple into quarters, stick inside of the duck. Lay several strips of bacon over the top of the duck, place in roasting pan & pop it in the oven.
If you want to get fancy, start off breast side down & flip it over & crank up the heat for the last half-hour to crisp up the skin.
The fruit inside will help keep the breast from drying out.

I like the recipes for Cantonese roast duck. The treatment prior to hanging (for 24 hours) and roasting allows most of the fat to melt away during cooking. And the taste of five spice powder goes so well with duck -- it is truly amazing.
And you don't have to wait for a holiday!
