I just ordered a Florida Prince. Supposed to be good for zones 8-9.

Good question, I just went out and used a tape measure and went around it. I got 8" around. It does not even look that big.

American Nursery rule of thumb uses a caliper to measure trunk diameter.
Measure 6" above the ground for trees up to 4" in diameter.
Measure 12" above ground for larger trees.

I do not have a Caliper, close to 3"

The formula for figuring the cirumference is pi (sorry, my character map does not show me how to display the symbol,) but it is, roughly, 3.1416) X 2 r (radius) = cicumference.
So if you got a circumference of 8 (by wrqpping the tape around the stem) and divide it by pi, you would get a diameter (radius X 2) of a little over 2½ inches, which is the caliper of the tree.
