Hi, im learning how to cook and i know people use different kinds of oil for different kinds of food but its not always the same oil for the same food.
theres different oils for stir fry, deep frying, cakes, and other things. if you use an oil for a meat or veggie or anything else that you think makes it taste really good please share. =)
I will contribute too when i make something i think is really good.

Generally I try to avoid oil. When called for in a recipe, I will often use Trader Giotto's (Trader Joe's) Imported Italian Olive Oil.
Now if I can figure out a better shipping arrangement with Croatia, I'll switch to Ante's Oil.

I like Canola. It's one of the healthiest oils, tastes good and it's inexpensive.

Yes, Ante's olive is by far the best I've had. I don't know if it's the freshness or the fruits, but it's amazing and I'm very happy to have been able to experience it!
Our regular go to olive oil is Bariani.

For deep frying I like peanut oil for the flavor it imparts.
For baking (especially savory) I have switched to an organic lard. The flavor and texture is unmatched.

For baking (especially savory) I have switched to an organic lard. The flavor and texture is unmatched.
I've always used Crisco vegetable shortening instead of lard. For my tastes it works just as well in pie crusts, etc.

I've always used Crisco vegetable shortening instead of lard. For my tastes it works just as well in pie crusts, etc.
I saw a huge difference. I've always craved the flavor and texture of my grandma's pie crusts, and now I finally have it! It only took me 20 or so years of baking to find it. :eek:
My crusts are now crunchy/flakey after baking, and after microwaving or reheating in the oven. This even works on chicken pot pie with all that moisture from the sauce. Add to that the flavor of the organic lard and wow!! :)

I have tried Antes olive oil and it is indeed great stuff. I think the reason is it is not over processed.Maybe Ante will explain later.
Antes oil was at least a two cougher.

Thanks for the link. =D mostly i just want to learn more about cooking but yeah we dont use canola oil for cooking but we have a lot of other oils but not rice bran oil. I'll try that too. This was on my dads PC and its why we dont use canola oil.

The wiki article says to use tea seed oil for stir fry but i want to try rice bran oil too. i want to learn how to saute mushrooms and stuff too so i will need to get a bottle of Trader Joe's olive oil. they have a store on Shelbyville road.

I've started using coconut oil (filtered over carbon so it doesn't smell or tastes like coconut anymore at all!) for thing like stirrfrying my food. It's much more healthy than butter and oils, and it doesn't give off a vapour or smoke if you heat it up to 180/200 deg centigrade.

For frying we use sunflower oil, if its for frying fish than I mix it with Olive oil. Some dishes here nothing can replace homemade lard and for ALL other food there is only Olive oil. We add it while cooking and on the plates after the meal is done. Im proud that our Oil travelled all arround the World :) and I hope that after New Year post will again return to old shipping politics.
BTW, pruning season starts in a few days:ha: Thats when the fun stops:ha:

I enjoy a good quality olive oil and use it most often. Olive oil is very healthy for you and it's practically an elixir for the heart.
I admit to using butter occasionally to fry eggs in...even with a little bacon fat left in the pan! :eek:
Ok and I have a thing for mushrooms fried in butter too but I try not to indulge in them very often (lying! :ha:). I also bake on occasion too, so I use butter and crisco shortening.
Alright...you've forced me to confess to using vegetable oil as well, when deep frying things...like french fries, etc. But only on occasion...like once a year. I used to be a complete health nut and still have tendencies. Moderation is the key.
I'm going to try some guy's olive oil who's a member on this site. I think he's from Greece but his screenname slips me. Bob's going to share some with me. :D He says it's the best he's ever had! I can't wait to try. :goteam:

Note: Please be careful with oils, especially when you're a new cook...and never leave oily pans on the stove unattended! :eek: A friend of mine burned his family's house to the ground when he was 20, while cooking with oil and leaving the room! It was horrible and he lived out in the country so the fire trucks took awhile to get there. Don't wanna scare ya Kevin but just be careful. ;)

Your thread on olives is way cool. =D If you ever export your oil to our country please let me know. we mostly use soybean oil for frying but im going to try the sunflower oil. we have a bottle of that. thanks for sharing.

Thats what ive been watching for (bold)! =D No epic worries for health because im totally healthy. I had a headache last summer from allergy (our neighbors cat) but i never even had a cold this year. basically i just want to know what oils make foods taste really good!

Yeah inorite? Lol! i googled "Ante's olive oil" last night and i only got 2 results and they were both bananas.org. That really rocks that theres an olive tree grower at this forum!

No worries for that. one of my parents is always with me when i use the stove or the oven. they totally freaked when my first crepe pancake landed on the stove, lol! They have to be flipped in the skillet without using a spatula and im a pro now! =D i can even make my own vanilla sugar and thats almost 3 months till its ready to use.

I use peanut oil in my little deep fryer. For oven fries I melt butter and coat them completely then bake them on a cookie sheet. They come out nice and crispy with great butter flavor!

I have been trying to find out what oil, and processing, is used for the steak fries served at the Red Robin restaurnt chain. They are the best commercial fries I have ever tasted so far.
Any info guys?
And talking about using lard --- that's what makes midwestern fried chicken great!
Hey, years ago, the fast food chains of today used beef suet - arguably the best of the best for deep frying!!! I know a diner on the Pennsylvania Tpk that still uses it today.

I think I like peanut oil the best so far for french fries but you have to take them out half way through and dry them off and cool them before the final boil to finish them for a crispy perfection inside and out. I don't get to eat them often but, when i do I still look for even better ways to enjoy them.
How about Popcorn? Coconut oil is amazing?

...or the truth! It's amazing how far false information can spread! If you used the same logic, eating cherries, apples, pears... will all harm you because they contain cyanide(similar compound)!

Just keep in mind that Canola is made from genetically modified rapeseed plants (Monsanto) Most corn oil is GMO too. I try my best to avoid GMO products.

Mitchel, to the best of my knowledge, no GMO corn is used for human consumption, including corn oil. There was a famous case of GMO corn ending up in Taco Bell taco shells 10 years ago or so but that was because of some mix-up. There have been proposals for GMO sweet corn but that's not actually taken place yet. As far as I know, corn oil is "okay".

I don't believe so, unless you're bovine, swine, fowl, or an ethanol plant.

My family has farmed corn in California for about 100 years, btw. We've grown some sweet corn for family/friends but all the rest has gone for feed. I've know of a few people who planted isolated white grain corn for tortillas and one guy who had a sting in growing popcorn about 30 years ago.
A lot has been said about how using corn for ethanol is taking food away from people. I've got mixed feelings about such statements since this corn wouldn't normally ever go for human consumption anyways. I'm not advocating a vegetarian diet (I like eating meat myself), but feeding grains to animals later to be slaughtered for human consumption can also be said to be taking food away from humans since animal conversion of grains is not very efficient (fowl being best, then swine, then bovine). If human hunger becomes an even greater problem in the world I think we may have to curtail our meat consumption. Hunger in the world today is driven by economics since those starving folks that need the food are unable to pay for it. :(

Yeah, I understand. I believe that most GMO crops are probably safe for human consumption but I think it's generally best to try it out on somebody else or on the test animals. I believe consuming animals that have eaten GMO corn reduces the risk considerably. For instance, there have been some claims that GMO crops have caused cancer in organs of rats. I don't believe eating an animal that has cancer is going to give me cancer.
BTW, even though I prefer not to take my chances with Canola oil, I think that link you gave earlier was not entirely credible. Among the things that stood out to me was that Canola caused mad cow disease. It's pretty well known that mad cow disease is a virus and spread by feeding blood meal, etc. to other animals as a food supplement. Yum. I passed on my chance to taste the blood meal sample passed around my "Feeds and Feedling" class in the Animal Science course I took at Cal Poly! That was long before anything like mad cow disease was written about.

We cant (and no need to) fight GMO IMO, its just to complicated and GMO in general isnt so bad idea. Unfortunely there is too much politics and money involved in food industry, and the same moment something became "industry" money is the prior fact and its all only about money and profit.
I belive that humans have more damage of pesticide and drugs (mostly antibiotics) usage in food production than from GMO.
I belive that if one grows GMO food on healthy and lets say organic way he can get a healthy food.
So, grow your own food as much as U can:ha:

I know what Microstart 60 tastes, smells and feels like. When it's windy you get to enjoy it along with the bananas. Makes you hesitate when you pass a KFC on the road at lunchtime.

Palm oil is destroying Orangutans habitats in Malaysia/Indonesia I found it finally. In Malaysia they don't want you to know which oil is made from Palm, they argued with Australia, wanted it listed amongst the Ingredients..Malaysia won and it won't be listed...:(
So this is the one I found at Sainsburys supermarket that has been made from palm oil plantations. Its the only one that has the Palm Oil listed as an Ingredient.
Yes its nutritious, yes its got vitamins etc but its still made from forests...sustained or otherwise.

Dan, never heard anything about manure management at the time. I was only required to take one animal science class. I was also only required to take one soil science course but took four because I found it a lot more interesting.
I think the blood meal tasting was something the instructor did just for his own enjoyment. The tobacco chewing cowboys generally acted like it was cool but I figured they had been kicked in the head by steers a few times. ;)

That's a tip not many know. The second fry is at 360*F. Most people will not spend the extra time to do this and they miss out.
You can also take day old frys and refry them. They will be just like the first time.
My wife burned our house down in 1991 after frying pork chops. Just a simple oversight. It only takes seconds for a house to go up. Was a blessing in disguise. I took the money and built a better bigger house.
I'm old enough to not worry about the health issues so I use what taste bests. Butter, Crisco, Lard, Peanut oil, bacon drippings, commercial clear frying oil.
Just remember to not mix fish oil with chicken frying oil. You won't like your chicken much! LOL

To kick popcorn up a notch, I use a 50/50 mix of vegetable oil and chili oil (find it in the oriental section of your grocery story or at any oriental market).
I use different oils depending on what I am cooking. Vegetable oil, olive oil, grapeseed oil, peanut oil or ghee.

The study didn't compare different oil types but diets in Spain with high amounts of fried food versus little. There, where primarily sunflower and olive oils are used, diets high in fried foods did not lead to higher levels of heart disease.
