So I have three ripe plantains, and I need to make something out of them before they go bad. Any suggestions?

ha ha ha here ya go ! kinda basic stuff but you did not say you wanted something special :ha:
One frying pan 3 tbs olive oil
Slice plantains about ½ inch thick (make little round pancake like slices)
Heat pan on medium heat Place sliced plantains in pan .
Flip after 3 to 4 minutes allow cook again on second side
Brown do not burn them , remove from heat on to a clean plate
Allow to cool Then eat them

Peel.. Cut in half lengthwise. scoop out centers and put in small bowl. Add 1 T crumbs
per plantain plus a 1 1/2 " slice of ordinary banana and 1 cooked slice bacon crumbled.
Re stuff each half, drizzle a little lime juice on each half and then top with grated
sharp cheddar. Bake at 350 for 20 min. Have with other caribbean food and make
a salad dressing of 4 T frozen grapefruit juice undiluted, 1 T light olive oil and garlic to
taste plus salt and pepper to taste. Excellent with orange segments and red or sweet
onion slices OR avocado and orange on romaine or lettuce. Very delicious.

Thanks guys. I have three so maybe I'll get to try a lot of things.
Yup..they are good when fried. Better yet, go to the oriental store, and buy a spring roll wrap(lumpia wrap). It looks like a egg roll wrap except its very thin. Wrap the half sliced plantains with the spring roll wrap. Then fry them..its crispy and sweet-a-licious. Add an ice cream if you wish.. Delicious.
You can mash it, and mix it with donuts mix or pancake. Then fry it; there's your banana donut.
But most of the time, I don't have time to do fancy cooking, so I just slice a little hole on the banana(this is to keep it from exploding), then I put it in the microwave. Cooked similar as in steam pot or boiled. Taste like cooked sweet potato. Yum.

:woohoonaner: Cut the plantain in slices. Cut bacon slices in half. Break toothpicks in half. Wrap the banana slices in bacon and secure with broken toothpicks. Fry until cooked. My charter guests in the Caribbean LOVED these!

Man oh Man :) this is what Im making this week end .. I have never tried them like this before but it sounds so good !

Green plantains are delicious fried but I fried a ripe one and was amazed at how sweet it was. All those years in Key West and all those plantains I missed cause someone said they were terrible to eat. Not anymore.

Agreed, Ilonka at La Cocina Del Camaguey fries ripe plantains split down the middle. So awesome!
