Some Hawaiian Apple fruits that were stunted from the weather last year. They just sat there and never fully developed. They were also malnourished as I planned to remove the whole stand but never did. They taste great anyway!

I just cut up some small scallions from my garden and threw it in my soup. But, I went a little heavy on the red pepper so I wasn't fully able to enjoy the scallions. Oh well.

I stopped eating raw oysters, just not worth the risk. I love me some fried oysters though! Served with lemon and some really spicy cocktail sauce...yum!

No problem.Similar to Kombucha if you have had that. Which you can find at many health food stores. G.T.'s Synergy is the best brand in my opinion. It is hard to find real water kefir, that coconut water stuff isn't real.

Quick and easy- tuna over rice or noodles.

2 cans tuna in oil, drained.
2 cans cream of mushroom soup
I soup can milk or half and half (depending on your cholesterol count...lol)
3 inch wedge of Velveeta or cheddar, cut into small pieces

Mix all together in saucepan, heat until cheese melts. Pour over rice or noodles. Sometimes if I use noodles I then pour it into a baking dish, cover with crushed corn flakes and pats of butter and shake over top Parmesan/Romano, and bake at 350 for 15 minutes, then broil until top is browned.

Can't beat it for a quick hot meal. Feeding Mom can be tricky because of a severe hiatal hernia, but this she loves and tolerates well.

Naners and Duckling, Outstandingly Delish!

My special Dinner I made for Sunday was Roasted Wild Teal Duckling with Grilled Panache Figs and grilled Misi Luki Banana onto Ube mash with Wild Tupelo Honey Veges. It was an experiment that turned out Great! New found love for Misi Luki cooked-soaked in Mount Gay Rum.

I made a totally from scratch tarragon leek chicken pot pie with double crust made with organic lard. Wow! I spun a Julia Child recipe and took inspiration from my childhood memories of my grandma's home made pie crust made with lard. Best pot pie I've ever had! My wife and her friend said the same thing.

Lots of washing to begin with, dirty rascals! Then split down the center and chopped into 1/2" pieces and seasoned and sauteed in olive oil slowly with the garlic and carrots until the carrots were semi soft. Took about 15 minutes.

Then they went into the sauce mix and cooked down for about 10 min before cooling and being added to the pie which cooked 40 min at 400 degrees.

Get an old plow disk wield up the hole and wield some legs on it. This works great over charcoal for deep frying whole fish.

I've been wanting an upright smoker for years. The Egg and a few other more compact ceramic smokers have me thinking though. If I had the room I'd buy an upright even though they take more effort to maintain correct temp and use more fuel. I guess It just feels more old school which to me equals cool. Right now I have a small setup that fits in my Weber kettle called the Smokenater 2000 I believe. It's cheap and it works ok but it's very sensitive to changes in temps from very minor adjustments in the intake and exhaust vents.

Tonight's dinner was my wife's awesomely simple spaghetti. It's a recipe from a very famous local chef that charges a ton of money for it. Best spaghetti I've ever had and it's so simple! She makes this at least once every 1-2 weeks. :)

I made Chicken Milanese with a sage and lemon butter sauce last night. For the photo I should have used a small bowl to serve the sauce in but you get the idea anyway. It was really good!

Creamy chicken soup made from the left over carcass, meat and veggies from the roasted chicken, served with garlic bread made from sliced sourdough smeared with butter, crushed garlic, parmesan cheese and sweet Spanish paprika cooked in the broiler. So good! Sorry no pics, had company, the smell of the soup was intoxicating and I was starving!

The grill dome looks pretty awesome. I watched a video where they did a chicken cook off between the green egg and grill dome. They weighed the chicken at the end and because the grill dome chicken was heavier they declared it the winner. Seemed pretty bias to me especially seeing how the green egg chicken actually looked cooked and the grill dome did not. That says to me the grill dome is not coming to temp as quick or holding the temp. I would expect cooking times will be longer with the grill dome, or more fuel will be needed to reach the same temps.

All in all sounds like a sweet cooker, and the stand and hardware are superior for sure.

It's funny,not really. I spent a lot of time researching the ceramic grills.So I finally make up my mind and order one.I just found out that there is a store that carries the BGE that is only 1/2 mile from my house.Wish I would of found this out 2 days ago.

Well I am unable to cook a whole chicken until I get a few more accessories,don't know why I didn't buy them with the grill.I did cook a cut up chicken.As far as the ceramic cooker goes everything has turned out great nice smoky flavor. Once I get my accessories and some smoking chips I should be able to turn out some good roast and pizza

Yes they are very expensive. We usually just get the Margarita style that cost $13 but they are small so we buy two pizzas for the two of us.

We have a another pizza place we frequent that is NY style and consistently voted in the top 3 NY style pizza's in LA. We get an extra large that easily feeds 4 people for $16 if I remember correct.

Anyone have experience cooking Prime Rib Roast in rock salt?

I've seen the dutch oven method where you pack the roast in rock salt in the dutch oven, but I prefer to cook with a digital thermometer so that won't work for me.

So I'm looking at this recipe and thinking of using a disposable roasting pan and adding a layer of rock salt under the roast as well. What do you think?

Its commonly known to chefs as Anchur or Amchoor- Taste is acidic with a slight tart undertone, there is a little spicy flavor, but that is subjective to your personal palate. I have used the spice quite a bit. You and Tony will love using it. Good spice to experiment with!

Hey Tony you be surprised how many burgers I have tasted in my time over the years that SUCK! To me food is an art and some people should stay out the kitchen and there others then can rock the house.
I still wanted to see PICs of your creation sometimes the simple things are the best IMO :p

Love the dome cooker! Best chips I have used have been a mix of cherry and hickory. I been smoking meats for 15+ years now and its awesome to do. Enjoy your cooker... Smoked turkey is amazing.

I have tried apple wood soaked in Rum for smoking Fish, tasted awesome. Maybe the same combo would work for bananas too. I will try it out and let you know...

Yes but they have them for the food. I think the one in the link is for running a fan not sure.Anyhow looks like you can get most anything including one that will call you and tell you the food is ready

Tacos were awesome, but the best part was finding an authentic Al Pastor pit on the way home. These are getting really hard to find because the city shuts them down as fast as they get popular enough to find them, which is usually because Jonathan Gold or some other foodie writes about them. So stoked! :)
