I cut this p-stem flush at around 12 noon today.

24hrs later

I see a lot of tissue that looks like it is about to or has already started to rot.
Will you leave that or cut it off the plant?
I am afraid I am cutting too much on mine since I see similar growth on several of my bananas now but I keep cutting off the black tissue that looks like it is rotting...
Will this banana be ok given the looks of the p-stem you think?
If so I think my little guys have a chance!

There is no problem with this plant it's doing fine. I won't be cutting any of the black tissue off.
Yesterday I cut my Icecream back a little since I noticed there was rotting tissue almost at the center or the leaf ring surrounding the new growth in the very center.
On yours I notice the second most center leaf is also coming a little which looks healthy, for me it was not and just looked much more black than the outer rings of older leaves.
Do you think that was right to cut down a few inches until I found healthy growth on the center of the plant?
I will leave it alone now until the weekend since I am traveling and also they are forecasting great temps for the rest of the week, around 80 at day and 50-60 at night so I hope that will help it start growing.

Cutting it down to healthy growth was a good idea.
