I once attended a festival that served all kinds of food.
I purchased a dish that was green plantains that had been boiled
then sauteed with onions and butter. Not sure if there were other ingredients in the dish or not.

I barely knew was a plantain was at the time and had certainly never tasted one. I have longed to eat that wonderful tasting food again. A Hispanic lady had prepared the food, so wondering if it is a common Hispanic recipe.

Do anyone have an idea of what this recipe is or what it is called?

Sorry that I can't help you and not to be a downer - but they serve boiled green bananas with onions here, and it is one of the worst foods I have ever eaten! My gardener is so happy when I give him a bunch of green bananas - he says his favourite food is boiled green bananas with fried cheese and salami. No idea what it is called - but enjoy!!!

Thanks for the suggestion Island Cassie, but salami isn't my thing.

In fact, I'm a vegetarian. I'll keep looking; perhaps I'll meet up with the lady again that prepared the dish. You never know....

For green plaintains: Tostones: Peel the bananas and slice diagonally, about 1/4" thick. Heat up palm or coconut oil, and fry until soft. Remove from the pan, and smash it on a board with your fist. Fry them again until brown. Drain and salt to taste. Please note: The right oil is essential for the real taste. I learned to make these in Panama.

You can also cut them up, and add them to a curry instead of potatoes. Like we did in St. Lucia.

If they are yellow with black, you can slice them, and saute' them in butter with a little orange juice. If you want the glaze to carmelize, just keep cooking to let the juice to evaporate and the bananas to brown. Goes well with a scoop of vanilla ice cream or as a side dish.

For meat eaters: Using yellow with black plaintains, peel and slice it diagonally. Cut bacon strips in half and break some toothpicks in half. Wrap the bacon around the plaintain, and secure with the half toothpick. Fry until well browned.
