Tonight I'm making a t-bone steak with portabello mushrooms, & one of Bob's personal recipes for caramelized onions. A baked potato with sour cream and chives...and a tomato salad on the side. :D
I'm late making dinner tonight...because I can't get off this damn site!!! :ha:

An inside round beef pinwheel, made with black forest ham, red & green sweet peppers, spinach, red onion, and swiss cheese! Yummy!!!

Omg! I'm def hungry again! Photos!? Omg again! I had my camera in my pocket when we went out to eat tonight. Next time i'll take a photo before we eat! :) They wont care, they know i'm weird, lol! :D
Well, we had Chicken and shrimps, kwai chow style (with cashews and huge whole mushrooms!), won ton soup, fried brown rice with egg bits, and a tropical fruit mix for desert! :) Dunno what we're having tomorrow night but I'll def let you know... photos 2!

We had double bacon cheeseburgers with homemade curly fries! :D But no way to get photos cause we can't go into the kitchen when mom's cooking [or dad] and everybody always ****s around at the table so camera's def not safe there. :(
But i will take photos when i can and def when we eat out! :)

OK! Tonight was leftovers with a twist. Yesterday, Greg made home made chicken salad with onion, crunchy dills, mayo and a touch of ranch dressing, for lunch - which we had on whole wheat bread and chips. For supper last night we weren't too hungry so I made some Rotel tomato cheese dip with ground meat and scoop corn chips. Back to tonight.....we put the remainder of the chicken salad on some whole wheat burrito size tortillas, and put the hot cheese dip over that kind of having a cheesy chicken burrito thing. :chefnaner:

Oh I would die if we had a potluck - getting to taste everyones cooking!!!! I am really lucky - Greg loves to cook, he is more of a fancy type cook, I am a good cook, but my food is rib sticking homey cooking. Speaking of that, I think I need to finish off the banana bread here in a minute. If I talk about food, and see pictures of food, it makes me hungry.
I think we will have pot roast tomorrow, with potatoes, carrots and onions. (see what I mean - rib sticking) ~J

I love to cook and enjoy making 'rib-sticking' meals too. Hearty and nutricious, is kind of my style of cooking.
Some people can't cook worth a hill of beans! :ha:
My parents taught me how and I always loved it. When I was four years old, my mom got me an 'easy bake' oven, for little girls, and I was making little cakes for my older brother and frosting them!
Your dinner tomorrow night sound scrumptious, Janan. Wish I was coming over. ;)
As for the potluck, it would be so cool to all get together and share some laughs and some grub! I'd bring a few loaves of my homemade bread along with some dish or other I'd prepare...
Soon, I'll be making my homemade beef jerky. People kill for my jerky. Unlike the tough rubber-like jerky at the stores, mine is like thin pieces of steak! :eek: It doesn't stay around here long, let me tell you! :ha:

Tonight (OK, last night) I made a big pot of rib sticking cold weather beef and bean soup. Used top rib (a kosher cut) and while I didn't have any marrow bones home, it definitely was delicious. Had Lima beans, lentils, alphabet pasta, carrots, leeks, turnips, parsnips, dill, and onions. Mom made a Jewish dumpling called 'tszipkes' in Yiddish to top it off. Altogether so hearty that we only needed bread with it for a filling meal.

Well, yesterday night I was one of those people...
I had some German Pasta stuff (don't know the name) and I added onions, chicken, and canned green beans. Then I put a few too many spices, going over board with the Tabasco, and had it all stir fried up. It's edible, but not too tasty! :eek:
Tonight was just Rigatoni with store-bought sauce and johnsonville sausage meatballs, tastier than yesterday though. :ha:

I finally did it right! :D I made dinner tonight! Well, dad made the homemade breadsticks but I made the Chicken Tetrazinni! It's called tetrazinni since it's made with 4 types of cheese. I spiced and cooked the chicken, then the spaghetti. I sauteed the mushrooms, grated the cheeses, and made the veloute sauce. Then i layered the chicken and cheeses and stuff with the spaghetti (4 layers) and put it in the oven. It was awesome!! :D
Not as good the last time i tried cause i used the wrong cheeses and it didn't taste right.
Oh, mom made the salad. :)

Well, not last night but, last Sunday, I made a chicken on the new gas grill that Mike just bought me. I bought a rotisserie. Soaked the chicken overnight in brine.... injected it w/ with white wine & melted butter & OOOH YUM! Had honeyboat squash w/it (from garden) baked on grill - wrapped in foil w/ butter & brown sugar. YUM

A small beef roast stuffed with swiss cheese, onions, & spinach. I made some pasta with a nice swiss cheese sauce topped with roasted mushrooms and zucchini on top. Shared it with my mom. :)
Got a shot of the little roast with the cheese, spinach, & onions, but my camera died when I tried to take a pic of the pasta with veggies. :(

Just finished peeling off chestnuts and right now starting this..... adapted from a web site :
This is an Old World-style sauce that goes well with lean red meat such as venison. It would also fit with wild boar, or grass-fed beef. It would not, however, be good with normal, fatty beef. You want the juxaposition of lean meat and rich sauce here. The sauce takes a bit of doing, but it will almost certainly be something your family’s never seen before.
Serves 4
■4-8 venison medallions
■Salt and black pepper
■3 Tablespoons olive oil
■Small sprigs of dill to garnish
CHESTNUT SAUCE
■1 pint venison or beef stock ( I'm adding 1/2 venison demi glas by volume)
■1/2 pound peeled ( Correia) chestnuts
■1 small sprig rosemary, about 2 inches long
■Salt to taste
■A few grinds of black pepper
■1/2 cup heavy cream
■2 tablespoons finely chopped fresh dill
1.Make the sauce. Simmer (do not boil) the chestnuts in the stock ( and demi glas) in an uncovered pot for 45 minutes. In the last 20 minutes, add the rosemary.
2.Remove the rosemary and puree everything in a food processor.
3.Strain the sauce through a very fine mesh sieve.
4.Pour it into a clean pot and heat back to a simmer over medium heat. Take your time. Taste and add salt if needed. Grind some pepper in.
5.Cook the venison. Take the medallions out and salt them well. Let them rest at room temperature for 15 minutes to a half-hour.
6.Heat a pan over high heat for 3 minutes. Turn the heat down to medium-high and add the olive oil. Let it heat for a minute or two, but not to smoking.
7.Sear the vension over medium-high heat for 3-4 minutes, depending on the thickness of the medallions. Turn and cook another 3-4 minutes — less if the medallions are thin.
8.While the venison is cooking, add the cream to the sauce and bring to a simmer. Once it simmers, turn the heat to its lowest setting.
9.Take the venison out and let it rest for 5-10 minutes. Add chopped dill to the sauce.
10.To serve, pour some sauce onto the plate and top with the venison. Grind a little pepper over all and garnish with the sprigs of dill. Serve immediately as this sauce is not as good cold.
Served with rasted potato rounds with onions and cheese and glazed carrots......
You cant go wrong with fresh veison and a friends home grown chestnuts right?:ha: ( I could!)

Made a real quick meal, Tuna Fish and Rice. Mix 1 can tuna with 1 can Cream of Mushroom soup and a bunch of Velveeta pieces and heat with 1/2 soup can of 1/2 and 1/2 (not milk). Pour over hot rice. Quick, cheap and delicious!

The final decision...

Added some banana hot pepper rings later. It was surprisingly tasty. I made the cheese sauce with old cheddar cheese, a dollop of cheese whiz, milk, and sour cream. ;)

I like cabbage best plain, with hot butter melted on top, seasoned with salt and pepper, & a dash of white vinegar. ;)
You could also make some quick cabbage rolls Janan...and stuff them with any number of things, then cover them with your tomato dish you've shown and bake briefly in the oven.
Cabbage pieces in rice are good too.

Well, I didn't even end up making the crustinies after all!
I had the french bread all sliced and ready to toast and then there was a knock at the door. It was my girlfriend (which just means friend that's a girl! :ha:) with buffalo style chicken wings! :eek:
She knows I'm heart-conscious and I don't like to eat tons of stuff like that but once in awhile is ok...and they went great with the chili which I shared with her. ;)

Oh that looks so good! I love chili and hot wings. I wasn't very hungry tonight so I just had some port wine cheese with almonds (one of those balls you buy) with some crackers and a slice of whole wheat bread and peanut butter. But now after seeing that, I am gleeking and my stomach is growling. Drats! ~J

Made a BBQ chicken tonight with corn and a romaine/radichio salad. Quite good if I say so myself.

I love making a huge pot of chili, and then having it again and again. Some are mild, some hot, some sweet, some with beef chunks and ground beef, some with only one or the other. Different peppers make great variations, too. Yours must be fantastic considering all the hot peppers you grow, THL!

Chicken fricassee (leftovers from the other night). I serve it over either rice or noodles. (Usually rice- I LOVE rice!) This is slightly different than usual; I used chicken giblets and some home made small meatballs. Since we're kosher, I can't use a cream sauce, but the au jus is fine.

I love rice too...but prefer it light, dry, and fluffy. I eat it every chance I get. I like flavoring it different ways and adding things to it. :D
My personal favorite is cooking the rice with fresh garlic and butter, then adding diced green onion at the very end when it's off the stove. Yummy!

Hey Sherry,
Try your rice dish under some white (navy) beans. Delicioso!!!!
1. 4-bay leaves, 1/2-large onion, 1-clove garlic, 1-1/2 tsp. med. cracked pepper 1/2 tsp. kosher salt, 1-1/2 tbs. EVOO., 2/3 small bag beans.
2.Take the garlic and chop fine; add to kosher salt, and mince the garlic into the salt using a vegetable knife (wide blade). Do this by a back and forth motion with the thinnest part of the knife,like you were sharpening a straight razor with leather straps. Add to all other ingredients with enough water to cover by a 1/2 '' and simmer lightly for about 4 hours keeping the water just covering the beans. Remember to add only hot water from dispenser or teapot!

Making Angus Sirloin Steaks tonight with homemade "poutine"...which is fries with cheese and gravy. I bake my fries in the oven though, with olive oil, instead of deep frying. ;)
I also made a great salad with sweet cherry tomatoes and homemade bacon bits & garlic croutons!

I just slice potato wedges and lay them on a pan with a bit of drizzled olive oil on 400°F for 20 minutes before I turn them and cook them another 20 minutes.
I'm using gravy I made from a prime rib roast beef a few weeks back...it's in my freezer. I sprinkle a grated three cheese 'poutine' blend on the wedges and pour the hot gravy over top. ;)

Today I went by my Whole Foods store & had to stop in. I LOVE that store...produce, seafood & meat are the best. I bought some lean, healthy ground buffalo, calamari (squid) and a small octopus. While the octopus was simmering, I cut up the squid (no heads) & rolled in flour, then deep fried & sprinkled w/ lemon. The baby octopus weighed .67 lb & weighed 4 oz after cooked...that's .25 lb. Lots of shrinkage there! The octopus got cut up & is sitting in my ho-made It dressing. Oh yum! sorry no pics

I made a big pot of chili. Three types of beans-dark red, white and pink kidneys. For Mom's sake I was light on the seasoning- chili powder (sweet), cumin, salt, pepper, oregano, cinnamon (Cincinnati style). Sauteed the red, green and yellow sweet peppers with onions and garlic. Browned the ground beef. Mixed together with the spices, whole Italian tomatoes and a tad of ketchup. Simmered for 3 hours. Served over rice. I usually put it over spaghetti, but Mom wasn't in the mood for pasta. Since we're kosher, caan't put cheese over it, but it was absolutely delicious anyway. Plus, I have at least 2 more meals left!

Last night for dinner we had Texas BarBeQue. :chefnaner: You could smell it for miles around. We went to the Austin Stock Show and Rodeo and they were having a BarBeQue Cook Off! It was awesome, and Free to the fair going public. They piled it HIGH too! Piles of brisket, chicken, pork, and sausages were everywhere. You get the meat, sides (potato salad, french fries, beans, cole slaw) and drinks (including beer) for free, but you are supposed to leave a donation - though the amount of the donation is up to you. :woohoonaner: All the money from the donations go to the Texas Youth Scholarships Fund. The guys all enjoyed this tremendously (so did the girls, but you know the guys go into caveman mode :ha:)!
Sorry but I didn't think to get any pictures! :( My daughter In Law may have gotten some though - I will ask her an may post them later.

We have a function here in the summer called "Rib-Fest", where the money is donated to charity...but it's a set amount of 20 bucks. You get a rack of ribs, a cob of corn, beans, and maybe some coleslaw. The money goes to the boys and girls club. ;)

Holy crap.. so full. Big squishy kaiser buns, portabello shrooms, ham, pickles, cheese, mustard/ketchup/mayo, tomatoes and lettuce. The burgers had onion, garlic, oregano, rosemary, HP, Worcestershire, steak spice. Flattened the patties out with a plate then put a thumb print in the middle and that stopped em from getting all fat! Sweet potato fries and corn on the cob on the side that really were not needed but both awesome..

Japanese tonight were they cook at your table ! Mom took me out again for my birthday I guess there trying to get my weight back from what the chemo took away from me LOL. AHHH, love me those soft shells!! Last weekend I had hard shells with sweet corn, beer, and pie for dessert. Summer heaven!!
And of course we ate on a picnic table covered with newspaper. Can't get better than that, although I'm now jonesing for stuffed artichokes!

I had jerk chicken, red beans and rice and banana fritters. Dessert was a blueberry/strawberry/banana milkshake. I have a stand-up freezer full of blueberries and strawberries from my wife's family so I end up eating a about 1 pint of blueberries/day.

I made a light sour cream & yogurt based white sauce with romano and parmesan cheese...and garlic, for the macaroni. I didn't make enough sauce but it still had good flavor. :) That's baked extra lean hamburger meat and onions that I also added.
It was another excuse to eat some of my fresh grown herbs and hot peppers...and gobble some more of my delicious window-grown "Table" tomatoes...

Ok so I made spaghetti sauce in my crockpot today, but I precooked the ground beef first so the grease wouldn't be running though my sauce. I added a Bay leaf fresh from my tree for flavor along with garlic, and my own grown hot peppers. I also added fresh oregano and basil at the end when the cooking was done, right onto my plate. It brewed all day long.
I made the sauce with red, yellow, and orange sweet peppers, zucchini, onions, and two kinds of fresh mushrooms...portabello & crimini...

I really have a thing for Portabello mushrooms (omg I love them! :ha:) and I eat them as often as I can. The ones I had tonight in my spaghetti sauce were just perfect, measuring nearly 4 inches across! :eek:

Shawn came down from NY to see the US Open here. He took me out for an early Father's Day meal. We went to a great place called Capitol City Brewing Company. Had onion rings and Buffalo wings (hot!) for appetizers, then a delicious Swiss Mushroom Burger with sweet potato fries. To quaff it down I had one of their Prohibition Porters. It was all so good, especially sharing it with Shawn.

Tonight I had a strip sirloin grilling steak that was over 1 inch thick and huge (so I cut it in half), and a delicious caprese salad with red peppers, sun-dried and cherry tomatoes, herbs, and chunks of mozzarella cheese...

Today's lunch was Asiago shell pasta salad, with tomatoes, herbs, and diced red & green peppers, along side cheesy oven-baked garlic bread from a multi-grain baguette with delicious bruschetta...

Yeah it was good!!! I ate a small one just raw, it really is a nice breath freshener. I cut the flowers off it this morning so I can keep it. I guess I need to give my goji a haircut next! :(

I was busy and forgot to take a picture. we had roast beef and potatoes with gravy and fried okra.

I just ate leftover chicken thigh...marinated 18 hrs in lemon juice, lots of garlic, salt & pepper & fresh lemon thyme from the garden. Grilled on weber w/WOOD charcoal (I make my own).
Last weekend I made beer can chicken (ooh yum) on the gas grill, but I used iced tea & spices from Steven Raichlen recipe.
Sunday I will grill pork tenderloin wrapped in bacon w/ slightly cooked colorfull swiss chard (from the garden)...tastes like spinach.
T bones are on sale now so I will get 2 cut almost 2 inches thick & cook them directly ON hot wood coal as per Steven Raichlen recipe. I saw him (PBS - Primal Grill show) in person here recently & he cooked them in front of us...right on the coals! You just brush the ash off of them. They were med rare all the way thru & crispy on outside --excellent. Can't wait to cook them.
I grill out as much as possible in summer (as I dream of all winter) but soon I will get sick of it & wish for winter food....like a roast w/ taters & carrots baked in oven. :)

The lemon chicken and veggies with almonds were amazing and so were the jar doo chicken wings. Oh man am I still stuffed!

When you showed your yummy plate of spaghetti...was that whole wheat spaghetti noodles you had? They looked like they might be. I like whole wheat pasta and eat it often.
