Had a nice yellow one the other night with a good bit of black on it. Started to slice it up to fry. It looked so good.

I tried a disc or two and almost ate the whole thing.

I was surprised how good they were that way. The orange flesh is more dense than cavendish. I'm going to buy more and just eat them raw.

To enjoy a ripe plantain at its best let the skin turn completely black. This gives the plantain time to develop the most sugar/least starch.

And please don't try to eat it raw. Desert naners and some cooking naners are tasty very ripe but that's before the skin turns black. True plantains fully ripe will gag a maggot eaten uncooked.

When I was a kid, used to have fun with new visitors from the Irish side of the family. Put out yellow plantains with the Chiquitas in the same bowl and watched their reaction when they took a bite with their corn flakes.

This was a plantain with soft orange flesh. It was not black. It was sweet and tasty.

It certainly did not gag me.

Perhaps it was a type unfamiliar to you?

All of the plantains I have had ripe were fine. They are not like a cavendish but not gross either.

Yep Gabe - I agree with you. And if he had a fully ripe soft orange skin Orinoco - my favourite!!
