SO I actually found some hawaiian plantains for sale at the grocery store and they were ripe. I thought to myself what a shame, since these are supposed to be THE banana for tostones. I tried them as platanos maduros but they were way to gooey for my liking. I used to be a fiend for maduros, but I made tostones the other day for breakfast and I think I may give up potatoes all together.
Question: Do they ever sell the hawaiian plantains in the grocery store green or are they always ripe.

Yes you can find them green!
I find them green here at my local grocery.
Maya Hawaiian plantains, PLU #3287.
The green ones cook up perfectly for tostones!
I let the ones I use for maduros get some black splotching...
The kids LOVE it when we let the peels get almost black & eat them out of hand. :)
Helps to talk to your produce manager...
At my local grocery - they were going to discontinue carrying the Hawaiian Plantains, I spoke with a worker in produce & asked when they placed the orders & who the manager was & they were happy to let me know! I called him & he told me he was taking a loss ordering them weekly - I asked him to just order them by the case & I would buy them that way - he couldn't do that.
He orders a new case in every 3 weeks now & I am there every third Tuesday to get my green ones!!
I have some on the counter right now!!
Probably go through 15# a month, more if I entertain!

It was a little too gooey for me, kind of like frying a cavendish banana. Just not my taste.

Yes you can find them green!

Hello, I live in the NY/NJ area where I recently moved to, but when I lived in DC I could get these Hawaiian plantains easily. But now I can't find them in this area. I am going to take your advice and talk to my produce store, but is there a distributor number I can give the manager which she/he can call to order them? Thanks, Ben

You are not too too far from Krome Avenue (997) in Homestead. They used to frequently sell them in the roadside stands.
I am surprised that you do no have a few rows growing (as you plant bananas on a big scale).

I am actually getting 144 of them January 18th. I'll probably plant more as time goes on. I am trying to be very phytosanitary because I am growing a few variaties that are susceptible to Panama disease, so as a rule I don't plant anything that doesn't come from tissue culture. The big money bananas all seem to be susceptible to Panama disease.

There are some produce stands in Lake Worth trying to pass off some kind of platano burro looking thing as a hawaiiano.

One day this summer I stopped by the local Winn Dixie and found Platano Hawaiiano, the Hua Moa. They were still green in color but somwhat soft to the touch. I bought some anyway and just like you said they cooked up mushy and I did not like the taste. My sister in law likes the in-between regular platanos but I can't stand them. They are good completely green or fully ripe (black skin), period.
So it looks like you got a liner from Agristarts. You are absolutely on the money about avoiding diseases by introducing only tissue culture plants to your field. I got a susceptable Manzano from a reputable source and I'm hoping that it does not pick something up from the neighbors plants.

Like most things, better when they haven't made a long trip on a boat in cold storage. I have since figured out that you don't wait until they are nearly black like you would with a plantain. Full yellow makes a decent maduro that isn't too gooey. I've had varying reports of how well mofongo works with them. I can tell you that fufu doesn't work with them. I just had some customer's today orginally from Uganda that tell me that the hua moa is like their Matooke banana in texture.

Oh yeah, I would never eat them at all once they're black. Mostly or fully yellow is perfect for cooking them IMHO. True of other pacific plantains such as Tongan Hopa, or Hawaiian Maoli types like the A'ea'e.
