Pardon me if this has already been covered--I tried a search, but could not find a way to search without finding dozens of threads.

What is the best way to keep a raceme of bananas? Do they allways ripen together or is it variety dependent.

I ask because all of my Orinocos turned at the same time, but only one banana was ripe when I cut it.

The raceme will pretty much all ripen together once cut down. An option (if you can reach them) is to carefully cut round the top hand and bring it in to ripen, leaving the rest on the plant. You may be able to do this several times before the rest of the fingers start to change colour. This is the only way I know to avoid having 80 bananas ripe at once!

So you need a banana hand removal knife? (Banana Specialty Tools) :^)
