that is normal mine dry up to u might lose some of the stem or all of it as long as the corm is hard and not mushy it will come back in spring as for watering i dont water or wrap a damp cloth around the corm the roots usually dry up and die in a few days anyways so watering wont do no good only cause rot i usually cut all the roots of before storing them in my basement i just checked mine yesterday and the cavendishs the stems look pretty rought too and the ornamentals the stems r totally gone but all still hard and have green yet so no worries
