From the appearance of the first hand to maturity is about 6 months. If weather is warm enough, ripening will begin then.

I have half of a bunch Ice Cream hanging currently. The first half ripened in early October, but the weather turned cooler/colder and the remaining half of the bunch is still on the "tree" and probably will not ripen till early April when we get our first warm weather. I could pick them now, bring them indoors and they would ripen, but I am going to let the experiment continue.
