There is no real biological difference between cooking or dessert bananas, those designations are culinary ones based on cultural preferences, but the plants themselves don't really care what we do with them.
Those hard spots are sometimes caused by cool weather during fruit formation, did you have any of that in the last few months? Are the spots hard or just discolored?
