Default Musa Velutina/Daisycarpa blooming, need advice

My Musa Velutina/Daisycarpa started blooming today, and I want to harvest the seeds. Are there pollinators available in the U.S, or do I need to hand pollinate them. Also, can I harvest the bunch before the bananas split, or do I need to wait for the seeds to be mature, I am afraid the birds will beat me to it.
