Haven't tried this but it appeals to me. Banana Corn Fritters Recipe | Eating Well

Then there's Roasted Bananas with Chocolate Yogurt Cream Recipe | Eating Well

And possibly Chocolate-Banana Souffles Recipe | Eating Well

Since none of these are banana bread or even close, they sound yummy to me.
