We use them in making pasteles, in soups, and as a vegetable.

There is a native Florida variety called Seminole Squash that are smaller but resistant to fungus, and are more productive without the use of fungicides. They tend to be sweeter than the Cuban varieties. They can be purchased at ECHO Global Farms.
