Some of the smaller bananas were not stored dormant I stuck them in a south facing window in my spare bedroom and they did great. I only stored 2 of my huge bananas dormant. If I had room I wouldve potted them up when I dug them up as well. They have been dormant for basically 4.5 months. In a normal winter I wouldve kept them down there for another month or so but it has been really nice. Don't really know why you don't understand the purpose of potting them up. If I planted my ice cream now then a freeze hit I would be screwed....but since I potted it I can pull it into my garage out of the frost and cold. By potting it up and waking it up earlier I will hopefully get another 2 to 3 foot of growth compared to waiting till the normal last frost date...
