If you're indoors, you can do this whenever you want to without worrying too much about the temperature. I'm superstitious about moon phases when planting things from seed, but in terms of saving a plant grown from a corm, there's no stricture.

If your stems are not squishy, I wouldn't worry about trimming the top of the plant back to 15 cm above the roots, but if they are squishy, I'd do it.
